Bombay Biryani with Restaurant style chatni and Salad

BOMBAY BIRYANI

Ingredients:
Chicken 500g
Potatoes 3 medium
Piyaz 4 sliced
Tomatoes 4
Salt to taste
Sabut garam masala 1 tbs
Garam masala powder 1 tsp
Homemade biryani masala 3 tbs or to taste
Oil half cup
Rice 500 g
Yogurt 1 cup
Green chilies 2 to 3
For garnishing
Mint leaves
Coriander leaves
Lemon slices
Green chilies chopped
1/2 tsp each

RECIPE:
FOR BOILING RICE

Soak 500g RICE for 20 minutes. After that boil them by adding salt and whole spices. After boiling set them aside.

FOR CHICKEN GRAVY,

Fry onions in oil till light golden. Add tomatoes and ginger garlic paste, cook well till tomatoes soften and oil separates. Add chicken and bhunify well. Add salt and Biryani Masala. Add potatoes and cook well. Add dried plums. Add whisked yogurt. Cook till oil separates. Add garam masala powder and green chillies and set aside

LAYERING OF BOILED RICE AND CHICKEN GRAVY

Grease a pan with butter. Add 1/3 of rice, add chicken gravy then add other 1/3 of rice Again add remaining chicken gravy and rice. Sprinkle orange color, mint leaves, green chillies, coriander leaves and lemon slices. Cover tightly with lid for 10 minutes
Yummy Biryani is ready to serve

FOR HOMEMADE BIRYANI MASALA

Dry roast jaifel (1 piece), Badi Elaichi (4-5), Dar chini (4), Baadiyan ke phool (3), Sabut Laal mirch (25-30), Sabut kali mirch (half tbs), laung (1 tsp), Hari elaichi (10-11), Sabut Dhaniya (3 tbs), Zeera (1 and half tbs), Javatri (7-8), kala zeera (1 tbs), Bay leaves (9-10).
After roasting, grind it and add salt (1 tbs), paprika powder (3 tbs), jaldi powder (half tbs), tatri (1 tbs). Mix well. Add Sabut kali mirch (1 tsp), Dar chini (1), Hari elaichi (9-10), Sukha Aloo Bukhara (8-9), Bay leaves (9-10). Mix well and store in a clean jar.

RESTAURANT STYLE CHATNI
make green chutney by grinding green coriander half bunch, mint 1/4 cup, Green Chillies 3, garlic cloves 3, 1/2 inch ginger piece, lemon juice 1 tsp, zeera powder 1 tsp. After grinding add salt and chaat masala. Take 3 tbsp yogurt Add 2 tsp green chutney Mix with a spoon
