Mansaf is a traditional dish of Saudi Arabia made of mutton cooked in a sauce of dried yogurt and serve with rice or shrak bread. This is simply not a spicy dish. 

Mutton 1 kg
Water 6 cups
Gum arabic crushed 2
Clove 4
Cardamom 4
Black pepper 6 to 7
Cinnamon stick 1
Bay Leave 1
Cumin 1 1/2 teaspoon

Add all ingredients in a pot and cook.

For sauce:
Curd yogurt 1 cup
Cream 1/2 cup
Milk 1 cup
Salt to taste
Turmeric 1/4 teaspoon
Mansaf spice : 2 1/4 teaspoon
( White pepper ,Black pepper , Clove, cumin, cardamom, cinnamon nutmeg) blend and made powder form
Mutton stock 4 to 6 cup

In a bowl add cream yogurt and milk and mix with hand whisk and set aside.

Take a pot add mutton stock.
Then add yogurt sauce , mutton and all spices
Cook it for 6 to 8 minutes.

When it cooks put mutton in a separate bowl.
And blend yogurt sauce in a blender.

For rice:
Rice 2 cup
Water as u required
Turmeric 2 tablespoon
Salt to taste

Take a pot to add water salt turmeric.
Bring it to a boil.
Then add rice and cook.
