Egg Biryani by Shahzadi Waqar

EGG BIRYANI Preparation time 35:mins INGREDIENTS. For masala: Onions 3 Yougrt 1/2 cup Tomatoes 2 Oil 1/2 cup Green chillies 2 Coriander powder 1tsp Garam masala powder 1tsp Turmeric powder 1/2tsp Red chilli powder 1tsp Whole garam masala 1tsp Ginger paste 1tblsp Garlic paste 1tblsp Salt to taste Eggs 5 boiled Potatoes 2 For Rice: Basmati rice 3 cups Oil 2tblsp Water 8 cups Bay leaves 2 Star anise 1 Cloves 2 Salt to taste For Layering: Food color /saffron Fresh coriander Mint leaves Green chillies Lemon slices METHOD: Step 1: Soak rice for about 30mins, soak saffron in luke warm milk. Step2: For preparing eggs, hard boiled eggs and pierce them with fork. Step3: Heat oil in a pan over moderate flame, add sliced onions and fry until golden brown, add whole garam masala now add ginger garlic paste and saute until raw smell goes off. Add chilli powder, turmeric powder, garamasala powder and coriander powder saute for few seconds, add tomatoes and potatoes wait for 5 minutes, then add yougrt, salt mint leaves, Add boiled eggs, stir well and cook over medium heat until gravy thickens.. egg masala ready. Step4: Bring to boil 8 cups of water, add spices, salt and oil allow it to simmer for 5 mins then add rice. Drain it when cooked and set aside. Step5: For Layering Grease cooking pot, add rice, layer the egg masala, layer again with remaining rice, sprinkle mint leaves Green chillies lemon slices, saffron. Cover lid tightly and cook on very low flame for 15 mins . Egg biryani is ready serve hot witn mint chutney.
