Tamatay Anday (tomato eggs) by Hiba Zaman

Tamatay Anday Serves 2-3. Cooking time 30 minutes Ingredients: 3 medium sized tomatoes chopped 3 eggs 1/4 cup oil (or as per preference) 1 tsp salt (or as per taste) 1/2 tsp red chilli powder 1 tsp turmeric powder 2 tbsp milk Handful of fresh chopped coriander Nigella seeds (kalonji) a pinch Method: * Heat oil in a pan and add the chopped tomatoes along with salt, red chilli powder and turmeric. * Keep frying on a high flame until the oil separates and tomatoes are softened and cooked. * In a bowl beat eggs with milk and coriander. * Turn the flame low and add the eggs to the tomatoes. * Cover with lid and let simmer on low flame for 10 minutes until the eggs are cooked. * Now turn on the upper grill of the oven at 200 degrees, uncover the pan, and place it in the oven. Keep the oven door open, this step is performed just to lightly golden brown the eggs and give them a little crisp. You can omit this step. * Sprinkle nigella seeds at the end and serve with bread/bun anything you like.
