Assorted Turkish Pides Ingredients: Base: 2 cups self raising flour 1.5 cup greek yoghurt 2 tbsp olive oil. Mix everything, cover with a cling wrap and leave for 15 minutes at room temperature. Method: * Roll the dough flat and thickness should be half an inch approx. The thinner, the better. * For mince filling, roll the dough into oval shape. Spread the mince meat mixture evenly with spatula, pinch the borders and roll in the sides to make the eye/boat shape. * For cheese filling, roll the dough into round shape, put on the cheese and fold all the sides into a triangle shape, and press gently on top. * For mix cheese and meat filling, roll the dough into round shape, spread the meat over it on one side, put cheese on it, and fold it into a D-shape. Pinch the borders and sprinkle some nigella seeds (Kalonji). * Pre-heat oven at 200 degrees, on a baking tray place baking sheet, and place all the pides, spray some olive oil and bake at 160 degrees for approx 10-12 minutes until they turn light golden brown in colour. Mince meat filling: * Put 150g beef mince, 1 big tomato, 1 onion, 1/4 tsp salt (or as per taste), 1/4 tsp cinnamon powder, 1/4 tsp all spice powder, 1/4 tsp red chilli powder, 1 tsp ginger garlic paste in a chopper and chop everything to a fine smooth consistency. Sprinkle Sumac generously in the end before baking and while serving squeeze some fresh lemon juice. Cheese filling: * Equal parts of grated halloumi and mozzarella cheese.
