Matka Kunna Paya Ingredients Mutton (Meat + payaa trotter ) 1 kg Ginger garlic 1tbsp Oil 3/4 cup Red chili powder 1-1/2tbsp Coriander powder 1-1/2 tsp Daighi red chilli powder 1tsp Salt 1-1/2 tsp Turmeric 1/2 tsp Onion 1 large sliced Dried ginger powder 1/2tsp Fennel seed 1tsp Bay leaf 1 Cinnamon stick 1 Star anise 2 Black n green Cardamom 8 Yogurt 1/2cup Black cumin 1 tbsp Garam masala powder 1 tsp Roasted Wheat flour 1/2 cup Water 2-3 cups Julian ginger nd green chillies lemon for garnish Method Take a muslin cloth put all the spices bay leaf cinnamon star anise cardamom fennel seeds nd make a small bag (potli) Take matka earthen pot heat oil add ginger garlic nd fry Now add meat nd boiled trotters (payaa) daighi red Chilli,red chili powder, coriander powder, salt, turmeric nd bhunofy well add onion and cook for 15 minutes till water dries (meat water) add yogurt dried ginger powder put prepared potli add water cover nd cook. When meat tender add wheat flour paste.(check meat if needed add more water nd cook till done then add wheat paste) Now put black cumin Garam masala put it on dum for 10 minutes and serve with roghni naan.
